Watermelon & Coconut Smoothie

Happy Saturday morning! I woke up in a watermelon mood and thought I'd try and put together a smoothie. I've never attempted watermelon smoothies before because I've always worried that the texture wasn't for me but I was pleasantly surprised. This is a great summertime smoothie, it's not too thick and very refreshing. DSC04021

Serves 2

Ingredients:

  • 3 cups of chopped watermelon
  • 1 cup of coconut water
  • Juice of half a lemon
  • Handful of goji berries
  • 1 tsp of almond butter

Pop in a blender and whizz up for a good few minutes. Pour into your favourite smoothie beverage holder and enjoy!
