Slow Cooker Curry | Plant Based Dinners

I know it doesn't look like much, but this curry is one of the best meals I've ever made. Unfortunately it isn't the most photogenic but it will please your taste buds like nothing has ever pleased them before. Best of all, it's a slow cooker recipe meaning you pop it all in the pot before you head out to work and arrive home to a steaming pot of cooked yumminess. Heaven. curry

I actually threw this all together yesterday before running out of the door crossing my fingers that it would at least be edible when I got home. I loved it so much I just had to keep the recipe on here to refer back to whenever I fancy a hot bowl of tasty curry deliciousness. YUM!

Slow Cooker Curry Ingredients.

  • 1 Onion
  • 2 Cloves of garlic
  • 4 Tomatoes
  • 3 Potatoes
  • 2 Cups of coconut milk
  • 1 Handful of sultanas
  • 1 Tin of tomatoes
  • Salt & Pepper
  • 2 tbsp of turmeric
  • 2 tbsp of cumin
  • 1 tsp of spicy paprika
  • 1 tsp of sweet paprika
  • 10 Mushrooms

Method:

Chop the onion, garlic, potatoes, tomatoes and mushrooms up into bite size chunks. Throw them along with all of the other ingredients in the slow cooker and cook on low for 7-8 hours or medium for 4-5 hours.
