Mint & Garlic Red Beans

I'm all for trying new combinations but I honestly didn't think this one was going to work as well as it does. I actually took it up to my parent's house for everyone to taste test to make sure I'm not just really strange in finding this combo oddly delicious. Mint and Garlic Red Beans

Red beans are jam packed with amazing nutrients and minerals, they are a fantastic source of protein and work so well with the refreshing mint, red onion and garlic. This is a great Summer plant based dish perfect for BBQ's and garden parties. It's always good to have an easy vegan dish on hand during the Summer holidays.

Mint and Garlic Beans

Ingredients:

  • 1 jar of red beans
  • 1 tsp Coconut oil
  • 1 red onion
  • 3 cloves of garlic
  • 1 large handful of mint
  • Salt & pepper for seasoning

In a saucepan heat the coconut oil, add the crushed garlic cloves and copped onion, cook on medium heat for about 10 minutes. Add the beans, salt and pepper and tear up the mint and throw that in too. Cook for a further 10 minutes and serve!
