Healthy Snacks For A Road Trip

I'm off on a little road trip to France tomorrow, being the absolute food obsessed person that I am, healthy nutritious food was the first thing I thought of when planning the trip. I'll be taking a few bottles of water, a flask for tea or two to stay hydrated and an epic road trip playlist. So what healthy plant based snacks have I made?

Energy Balls

My go to snack for every occasion. They are so easy to make and super portable which makes them very handy for traveling in the car. I've made two types - chocolate energy balls and ginger energy balls.

Chocolate Energy Balls.

Ingredients: Oats - 2 cupsNuts - Walnuts, almonds or pecans are all great. 1/2 a cup Oil - I usually use coconut oil or olive oil. A splash Pure cacao powder -  you won't need much I usually just pop two tablespoons in. Chia seeds - I didn't use them today as everything else has a lot of chia in but they make them super crunchy and yummy. Honey - 3 tablespoons

Place the oats and nuts in a food processor blend to make a flour and then add the other ingredients. Roll into balls and refrigerate.

Ginger Energy Balls. Ingredients: Oats - 2 cups Nuts - Walnuts, almonds or pecans are all great. 1/2 a cup Oil - I usually use coconut oil or olive oil. A splash Ground Ginger - this depends on your taste for ginger I usually use 1 teaspoon. Honey - 3 tablespoons.

Healthy Ginger Biscuits

I said I liked ginger didn't I? Biscuits are another great portable snack and these are very scrumptious.

Ingredients: Oats - 2 cups Chia seeds - 2 tablespoons Coconut oil - 1 tablespoon Ground Ginger - 1 teaspoon Honey - 1 tablespoon Splash of plant based milk. Sultanas - handful

Place ingredients into a food processes and blend. Roll into balls and then flatten. Bake at 180 degrees Celsius for about 30 mins.

Cakes

I made Deliciously Ella's Gooey Black Bean Brownies from her second book which are just heavenly, you would never guess that black beans are the made ingredient! I also made Deliciously Ella's Zesty Easter Scones which are on her blog. They are absolutely delicious however mine have more of a muffin texture than a scone.

I topped the scone/muffins with a homemade strawberry jam. I litterally just chop some strawberries up, pop in a saucepan with a little water and boil. After about 10-15 mins I strain, blitz in the blender with a tablespoon of honey and leave to cool. YUM!
