These refined sugar free fig and apple biscuits are so yummy and make a delicious companion for that late afternoon cuppa on a chilly Autumnal day. A very simple, vegan friendly recipe which makes a batch of 12 biscuits. Here is the video on how to make them, ( a 24 Seconds in the Kitchen video so it's a quick one!) Fig & Apple Biscuit Ingredients:
- 2 Cups of flour (I used brown wholemeal flour)
- 1 Large handful of walnuts
- 1 Apple
- 1 Tsp of powdered ginger
- 12 Ripe figs
- 3 Tbsp of olive oil
Finely chop the apple, and simmer on a low heat in just enough water so that it doesn't quite cover the apple in the saucepan. Cook until soft.
Pre-heat oven to 220'c.
In a food processor add the flour, walnuts and ginger and mix. Once mixed together and the figs with the ends cut off and chopped in half. Mix again. Now add the cooked apple and olive oil. Roll into balls and flatten with your hand onto a baking tray lined with grease proof paper. Bake for around 40 mins.
