Egg free pancakes are a great vegan option for breakfast incorporating flaxseeds instead of eggs.
After a really good workout, I'm not sure why, and for some reason it usually falls on a Tuesday, but I really crave pancakes. I want to fry up a batch of small round lovliness, flip them in the air squeaking triumphantly as not only do they do a mini summersault mid air but they land neatly back in the pan, without kissing the cieling in the process.
I do occasionally eat animal protein, about twice a month I will either have a little fish or an egg to keep on top of my B12 levels however I feel the need to make pancakes much more often than twice a month and I really enjoy experimenting with a variety of recipes. My apple, oat and ginger recipe is very similar to this egg free pancakes recipe however it does include eggs. Replacing the eggs with flaxseed seems to work very well. I was quite impressed!
- 4 tbsp of flax seeds soaked in 10 tbsp of water for 30 mins
- 1 cup of oats
- 2 cups of flour (I used brown flour)
- 2 apples
- 1 Tbsp of cinnamon
- 1 cup of milk (I used almond milk)
Pop the oats in a blender and blend until a flour has formed, add all of the other ingredients. You may need a little extra milk or flour depending on consistency. Pop a drop of olive oil in a frying pan and make your pancakes!
Top with maple syrup and fresh fruit.
