Dark Chocolate Energy Balls

These dark chocolate energy balls are so so so soooo good, I can't even begin to tell you how good they are and if I could send them out to all of you gorgeous, beautiful wonderful souls I SO would. They are made with 99% dark chocolate as well as pure cacao and lots of other yummy goodness. They are great as an on the go, pick me up snack, and I've actually just this second made a huge batch for a trip I'm going on this weekend. I'm all about on the go snacks! These are, of course, dairy free and refined sugar free as are all of the recipes on this blog.

Makes 38-40 balls. If you'd like to make less just divide the recipe up!

Dark Chocolate Energy Ball Ingredients:

  • 2 Cups of oats
  • 1 Cup of sultanas
  • 4 Tbsp of chia seeds
  • 3 Tbsp of coconut oil - I spooned the solid oil out and popped it in a mug and microwaved it which I think works better with the energy balls as it makes sure each ball gets some coconut-y goodness.
  • 1/2 Cup of walnuts
  • 3 Tbsp of pure cacao
  • 9 Squares of dark chocolate
  • 4 Tbsp of honey

Method:

Pop the dry ingredients into a food processor and mix thoroughly, now add the wet ingredients. Roll into balls and store in the fridge. If you wet your hands a little before rolling the balls it will ease the process.
