Whenever I think of the festive season, chocolate always comes to mind, and when I think of Christmas parties nostalgia kicks in and memories of all the good stuff tickle my taste buds. When I was little my mum always made chocolate crispie cakes, I thought I'd pop a refined sugar free, dairy free twist on these so here is my version of this classic treat.
Makes 20 cupcakes.
Chocolate Crispie Cakes Ingedients:
- 1 Tbsp of coconut oil
- 3 Tbsps of honey
- 3 Tbsps of Cacao
- 100g of puffed quinoa or corn puffs
Melt the coconut oil and honey on low in a large saucepan, once completely melted add the cacao powder and then remove from the heat. Finally add the puffs mix thoroughly and spoon into cupcake cases. Refrigerate for a couple of hours. Enjoy!
