Blueberry & Cranberry Sweet Flat Breads

These are the most wonderful mistake I have ever made. My aim was to create scrumptious giant cookies but I ended up with the most delicious, healthy plant based snack you could ever wish for. This makes a great vegan friendly breakfast on the go or can be topped with fresh fruit if you have a little more time in the morning. They are also a great substantial post workout snack. DSC03741

Makes 6 rather large, very yummy flat breads.

Ingredients:

  • 2 Cups of whole wheat flour
  • 1 Cup of oats
  • 4 Medjool dates
  • 4 Tbsps of chia seeds
  • 3 Tbsps of coconut oil
  • 1 Large handful of sultanas
  • 1 Cup of rice milk
  • 2 Tbsps of Honey
  • 1 Handful of Blueberries
  • 1 Handful of Cranberries

Pre-heat over to 180c.

In a food processor place only 1 cup of flour, 1 cup of oats, the medjool dates and chia seeds. Blend to form a flour, add the sultanas, milk and honey. Now place the mixture in a large mixing bowl, add the blueberries and cranberries and mix in with your hands, now add the other cup of flour to form a dough.

Grease a baking tray with a little coconut oil, break off a large handful of dough and roll into a ball. Flatten with your hands and place on the tray. Repeat 5 more times and pop in the oven. Bake until slightly brown on top, for about 20-30 mins.
