This is my take on the amazing Deliciously Ella Beetroot and Coconut soup as I didn't have all of the ingredients required to make it. I made it up as I went along and it actually turned out ridiculously scrumptious, I think I'll be using this recipe more often as I love the texture.
Serves 6 Ingredients:
6 Potatoes 1 Coconut 3 Steamed beetroots 1 Tablespoon of honey Salt & peper Juice of 2 lemons 2 Large glasses of water
Chop up the potatoes with the skin left on and place in a saucepan of boiling water until soft. Add to a blender along with the other ingredients. The coconut water should be added too, I had to blend mine in batches as it didn't all fit into the blender at once. Mix up and enjoy!
