Apricot & Almond Bites

These scrumptious healthy treats are a delightful mixture of sweet and tangy, they went down a treat in the staff room at work. These vegan snacks are great for parties and get togethers. They keep beautifully in the fridge for up to a week. DSC04133

Ingredients:

  • 1 Cup of oats
  • 1/2 Cup of almonds
  • 5 Tbsp of chia seeds
  • 1 Tbsp of almond butter
  • 1 Tsp of cinnamon

For the Jam:

  • 4 Apricots
  • 1 Tbsp of honey

Makes 18 bites.

Pre-heat oven to 180 degrees Celsius.

In a food processor place all of the ingredients. Mix together well. Now roll into balls and flatten, with your thumb make a well in the bite. Place on a grease proof paper on a baking tray.

To make the jam chop the apricots and place them into a saucepan, add the honey and simmer on low for 10 minutes. Place into a food blender and mix.

Now spoon the jam onto the bites and bake for 20 minutes.
