What kind of adventures would you like to have?
When I read this question in my Dear Future Me journal the first thing that came to mind was a World Trip, a journey of massive proportions that would take me to every corner of the globe.
Upon considering this question a little more carefully, I've realised that although I'd love to take a year or two off from normal life and travel to each and every country, I'd much prefer to see the world in smaller, bite sized segments.
Adventure - (noun) 1. An exciting or very unusual experience.
Maybe it's just me, but when I hear the word Adventure an image of a big old rucksack and a map comes to mind. This is probably largely down to watching a few too many Disney films.
An adventure can be anything though can't it? According to the dictionary, (which is always right) it is an exciting or unusual experience, and I hope to have many of those in my future.
I want to climb a mountain and shout "We did it!!" from way up high. I want to board the orient express and take every tiny detail from my vantage point next to the window. I want to pick a random destination at the airport and fly there for a weekend of unplanned memory making.
I want to embark on an exciting yet terrifying sailing trip, to lie under the stars at night and listen to nothing but the waves as they hit the side of the boat.
I want to put my feet in every sea and ocean, with that special person's feet sinking into the sand right next to me.
I want to explore a forest and sleep in a tree house, boil hot water on a camp fire to make tea (because let's face it this refined sugar free babe is not going to be toasting marshmallows anytime soon) and wrap up warm in a big fluffy blanket.
I want to meet an elephant in India and travel to Australia. I want to visit Ireland and return to New York again.
I want to splash my welly clad feet in big puddles, wet hair plastered to my face giggling and dive into beautiful infinity pools.
I want to create an entertaining Youtube channel and a blog that readers return to again and again for plant based recipes and inspirational life posts.
I want to author a cook book, not one that just looks great on a shelf, aesthetically pleasing with it's perfect pictures, but a recipe journal that is dog eared, splattered with a sauce from this recipe and icing from that, used by so many because of it's adaptable, quick simple meals.
I want to buy a cottage and make it home,a kitchen regularly filled with loved ones joking and laughing, and plenty of land so that I can have a cow, goats, a donkey and chickens. A Labrador will welcome me every time I open the pretty red door and step over the threshold.

All of these adventures would, of course, be incredible achievements alone, however, I think I've found my adventure buddy. It looks like we'll be late for dinner on many occasions.
